Easter Dinner Menu


Rosemary Grilled Lamb Chops with Mint Apple Sauce

Prep Time: 20 mins Cook Time: 15 mins Servings: 8 chops


Ingredients

Sauce

  • 1/2 cup packed mint leaves

  • 3 sprigs flat leaf parsley, (leaves only)

  • 1 Granny Smith apple, cored and sliced

  • 1/3 cup olive oil

  • 1 tbsp lemon juice

Lamb Chops

  • 1 rack of lamb

  • 1/4 cup olive oil

  • 3 cloves garlic, minced

  • 2 tsp fresh rosemary, finely chopped

  • salt and pepper, to taste

Directions:

  1. Add all of the sauce ingredients into a food processor and pulse until well combined. Place the sauce in a glass jar and store in the refrigerator until needed.

  2. Slice the rack of lamb into individual chops. Place the olive oil, garlic and rosemary into a glass baking dish and stir together. Place the chops into the baking dish, coat both sides and marinate for 30 minutes.

  3. Heat a grill on medium-high heat. Place the lamb chops on the grill for approximately 3 minutes each side. Let the chops sit for a few minutes before serving with the mint apple sauce.


Garlic Herb Roasted Potatoes

Prep Time: 10 mins Cook Time: 45 mins Servings: 6

Ingredients

  • 3 lbs small white (or red) potatoes

  • 3 tablespoons olive oil

  • 2 tablespoons minced garlic, about 6-7 cloves

  • 2 tablespoons fresh parsley, or other herbs

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit.

  2. Cut the potatoes in half or quarters (if they're large) and place in a mixing bowl with the olive oil, minced garlic, parsley, salt and pepper.

  3. Bake for 30 mins.



Meyer Lemon Coconut Macaroons

Prep Time: 10 mins Cook Time: 20 mins Servings: 12


Ingredients

  • 1 1/2 cup shredded coconut, unsweetened

  • 1/2 cup almond flour, finely ground

  • 1/2 cup honey

  • 2 tbsp coconut oil, melted

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1 meyer lemon, zested and juiced

Directions:

  1. Mix all ingredients in a bowl until well combined.

  2. Using a 1.5 tbsp cookie scoop, scoop the mixture onto a baking sheet lined with parchment paper.

  3. Bake at 325 degrees F for approximately 20 minutes, turning the baking sheet halfway through The bottom of each macaroon will start to brown with finished.

  4. Cool macaroons on the baking sheet for at least 15 minutes before transferring to a plate (otherwise, they will break apart).
